1 ½ cups nonfat Greek yogurt
2 large eggs
1 serving egg substitute
¼ cup coconut oil, melted
¼ cup granulated stevia
½ cup oat flour
1/2 cup oat bran
1 ½ teaspoons baking powder
½ teaspoon kosher salt
2 scoops Nutrabio Muscle Matrix Chocolate flavored protein powder
¼ cup unsweetened cocoa powder
2 servings dark chocolate chips
1 small square (half serving) of unsweetened chocolate baking bar
Preheat the oven to 350°F.
In a medium mixing bowl, beat together eggs, yogurt, and melted coconut oil. Add the granulated stevia and whisk to combine.
In a large mixing bowl, stir together oat flour (you simply grind oatmeal in a blender), oat bran, baking powder, protein powder, and cocoa powder, just to combine.
Pour the wet ingredient over the dry ingredients and stir together until the mixture is a thick, uniform batter.
Add unsweetened baking bar (cut up in small pieces) and chocolate chips, stir.
Spray a 12-cup muffin tin with nonstick cooking spray and divide the batter evenly among the muffin cups. Bake the muffins in the preheated oven cooked through, 12-14 minutes. Cool completely before serving.
