Pumpkin Protein Oatmeal Raisin Cookie

Ingredients:

  • 1 ripe banana
  • 2 whole eggs
  • 1/3C pumpkin puree
  • 2 tbs almond butter
  • ½ tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • ½ tsp nutmeg
  • 2 tbsp organic honey (sweetener)
  • 2 scoops Classic Whey Pumpkin Pie
  • 1 ½ cup rolled oats
  • ½ cup raisins

Directions:

  1. In a medium bowl, mix all dry ingredients together with the almond butter & honey. Mix ingredients until the consistency are smooth.
  2. Add Classic Whey, Oats, & raisins & continue mixing.
  3. Place the bowl into the fridge for 15-20 min.
  4. After refrigerated, make 6oz scoops of batter and begin making cookies. Recipe yields 6 larger cookies.
  5. Press with thumbs to form a “cup” in the cookie. Place 1 tbs of peanut butter into a cup of cookie and then roll batter over (this will keep peanut butter inside cookie when baking).
  6. Bake at 375 degrees for 12 min.
  7. Enjoy!
